Ripe jackfruit is carefully cleaned and separated from its pods, then combined with jaggery and ghee in a heavy vessel over a gentle flame. Over many hours, the moisture evaporates naturally, concentrating the fruit's natural sugars, intensifying its characteristic aroma, and gradually deepening its colour from golden amber to a rich, dark mahogany.

The colour of Chakka Varatty can range from warm amber to deep mahogany depending on the jackfruit variety and cooking duration. Colour variation is entirely natural and a sign of authentic slow-cooking.
